For some years I'd wanted to apply my winemaking ideas to the old vines of Cormons. The opportunity arrived a couple of years ago when the old owner of a historic vineyard in Cormons decided to make her Friulano and Malvasia Istriana grapes available to me.

The property is split into two parts with vines between 50 and 80 years old, one of which is a true "Clos" enclosed within the walls of the old palace belonging to the Contessa Weiz Del Mestri.

The vines are pruned using the traditional “doppio capovolto” system that allows larger quantities of grapes to reach matrity than the more frequently used Guyot, but requires a high degree of selection, both during picking and at the cellar reception.

The idea is to showcase a purity of expression that has almost been lost in favour of more volume and exuberance, bottling a true sense of the place and of a tradition that has almost become the "classic" way to make wine in our territory.

Hence no macertaion on the skins, ageing on the finer lees until the Spring and an early bottling to capture the light and elegant friut, showcasing the terroir in two cuvées: the less exposed vines are used to make the Delfino della Contessa (just Friulano), whilst the most beautiful vineyards are used for the Monopolio della Contessa, Friulano with a little Malvasia Istriana, an old fashioned version of the lean, elegant whites that Mario Schiopetto taught us all.

The quantities produced are very small due to the low yields of the old vines, but already in the first vintage they show the signs of a noble and sophisticated product, with the potetial o age with elegance.
